This is a golden oldie - it's actually one of the very first recipes I ever blogged ... and you know what since 2008 it has only ever had 6 views. I couldn't believe it - this is a great dish. It is simple, it is quick and it is easy!
So I've deleted it from it's original place in this blog and I am bring it out again today. I hope that you read it, and enjoy it, and hopefully leave a comment!
If I was Jamie Oliver I might even claim that this is a 15 minute meal - but it's really 15 minutes of cooking time, with about 5-10 minutes of preparation. So whip up this light summer dinner for you and your loved ones - oh and the omega 3 in the salmon is not only good for me ... but little baby's growing brain too.
BAKED SALMON WITH HUMMUS AND SNOW PEAS
2 salmon steaks
4 tablespoons of honey
3 tablespoons of soy sauce
2 tablespoons of lime juice
1 teaspoon crushed garlic
1 teaspoon crushed ginger
2 shallots
200g crushed macadamia nuts
1 bunch baby carrots
6 tablespoons of hummus
150 grams of snow peas
Mix together in a bowl 2 tablespoons of honey, soy sauce, lime juice, garlic, ginger and the shallots (finely shredded).
Line the bottom of a baking dish with the carrots and drizzle the remaining honey over the top. Place the two salmon steaks on top. Spoon the marinade over the top and then finish with the crushed macadamia nuts.
Bake in a 200 degree oven for 15 minutes. Serve with hommus and snow peas.
